Tony asked the Tea Docents, Nez and Donna Tokugawa, at Chado-En to select the ideal teas to compliment his sophisticated dishes. The Tea Docents studied his flavors and made recommendations, trained his staff on the correct tea preparation with a unique metropolitan delivery.
